Cook n Bake Week Final Results

Finally I've finished almost all my planned cook n bake list. I made Vegetable puffs, Hard pretzel (recipe from Food network), Rice Pancake dough, curried  vegetables, coconut rice and vegetable rice in the last two days. In addition to that, I made some plain rice and froze it for future use.

Alton brown's hard pretzel recipe is so tasty and colorful. Here at home, we love hard pretzel with variety of flavors. We used to buy Snyder's flavored hard pretzels very often. Thanks to Food network! We're no more is going to spend around $3 for Snyder's.

I skipped cranberry muffins and french bean cassarole as I don't have any space in my little freezer. We have only one small, standard freezer. Now the freezer is totally filled with my dishes, fruits, vegetables and much more. Its impossible to add one more dish in the freezer. So I thought its better to skip them for now and make them in 1-2 weeks, if needed. To tell you the truth, I'm so tired of this one week baking. I never liked 1 day cooking as you'll feel bored of cooking. But 1 week cooking is worst. I hate it to the core as I'm washing, cooking and cleaning for almost through out the week.

I think I'll be back to 1 day cooking from next month. This week, I cooked some additional dishes which are not in my cook n bake list.

Here is the total list of dishes from my cook n bake week:

1. Eggplant Lasagna
2. Pasta (cook and freeze)
3. Vegetable Puffs(Vegetables: French beans, carrots, Indian cottage cheese (paneer) and Corn)
4. Rice Pancake Dough
5.  Curried Vegetables (for Tortilla stuffing)
6. Whole Wheat Flour Tortilla
7. Cranberry scones
8. Vegetable Rice
9. Sweet Potato Burger Patties
10. Pizza Dough
11. Coconut rice (my all time favorite)
12. Lentil (cook and freeze for soup)

I believe these dishes will last for at least 1 month. We prefer to eat rice in almost all our lunches. So, anything other than rice will go for breakfast or dinner.

Overall, its worth cooking at a stretch and freeze it. That way we're saving so much time, money and work.
Since I have only one little freezer I may cook once in 3 weeks. Lets see how far these dishes come.
